Eggs are an easy way to have a tasty carb-free breakfast. I've noticed that when I start my day carb-free, I am able to manage my blood sugar better throughout the day. With this recipe I am able to store in the fride and heat up each morning for an easy on the go breakfast!

ingredients

  • 8 Eggs
  • Salt & Pepper
  • 1/2 LB of Italian Sausage (I use Spicy)
  • Your favorite cheese & veggies ( I use cheddar cheese & spinich. Other options: bell peppers, mushrooms, onions)

directions

  1. Preheat oven to 350 degrees.
  2. Brown meat on medium high heat until no longer pink.
  3. Beat eggs in a large bowl with salt and pepper.
  4. Add meat, veggies and cheese. Mix
  5. Pour into greased muffin or cucake pan 2/3 full.
  6. Bake for 25-30 minutes or until eggs rise. Use toothpick to check if finished.
